This 48 oz. Cornado is
equipped with “dual”
temperature settings. Yes,
the “Big Eye” can have
two top limits – one for
regular corn and the other
for sugar coated corn. Use
a 3 lb. measure of corn, plus
11/2 lbs. of sugar. Start with
a “three kernel test pop in
the oil. When those kernels
pop, add the salt, sugar and
corn, plus a salt measure of
Compound S. You make
huge quantities of Kettle
Korn this way.

Kettle Korn and Kettle Chips
Popcorn Machine Supplies #2080BGK Kettle Korn
Shown at left is the 34,000
BTU Gas Fired Kettle
Korn setup, which includes
the heavy-duty aluminum
kettle, Caramel Corn paddle
and Lexan lid (for operator
safety). Start with 8 oz. of
oil and three kernels of corn.
When those pop, add one
pound of corn and about 1/2
pound of sugar. Stir as
needed to complete the
popping cycle. Add the
sugar earlier for darker
– later for lighter.
Kettle Chips
This is another one – truly
“fat is okay at the fair.” And,
those old fashioned chips
first made at the Saratoga
Spa were made this way. Use
the #5280 Gold Medal Slicer
– fry an appropriate quantity
of these – you adjust the
thickness. Usually, fried a little
less crisp then supermarket
potato chips – usually cut a
little thicker. You be the judge
– you set your own standards.
